For episode #1 of ThatFOODandWINEshow, we decided to do Ripasso. Ripasso is also sometimes known as "baby Amarone". Amarone is a wonderful concentrated style Italian table wine from Veneto, Italy and Ripasso is still fermented Valpolicella that is refermented on the lees of Amarone in the oak barrels from which it came prior to bottling. This process of winemaking allows the Valpolicella to pick up some of the flavor characteristics of the Amarone. This gives consumers an opportunity to sample Amarone-esque flavors at a fraction of Amarone prices.
